I know July 4th is still two weeks away, but one of these recipes needs at least a week to prepare, so I wanted to get you some make-ahead recipes that you could start to think about now. #1 - Pickled beets and eggs - This is the one that has to sit for a week or two. You boil canned beets in a vinegar brine and then put the beets, brine, and hard boiled eggs into a big jar for one to three weeks. After about 7-10 days, the eggs will be deeply pink and so delicious and you won't believe how easy it is to make them. All the rest of the recipes can be made up to 2-3 days in advance and actually taste better the second day. If any liquid separates out, just stir it all up before serving. #2 - Marinated cauliflower - This also needs to sit for 3-5 days or longer. #3 - Asian pasta salad #4 - Creamy macaroni salad #5 - Instant Pot potato salad #6 - Cucumber pasta salad - This one does not have a creamy dressing. #7 - Cowboy caviar - This is a cold dip with black beans, black olives, and cream cheese. #8 - Red white and blue fruit salad #9 - Creamy broccoli salad #10 - Asian ramen noodle salad |
